A Quick And Easy Dinner- Chana Masala

People tend to have quite a few crazy ideas about Indian food. They think it all tastes the same and takes days to make to start off with... Well, this mom of 3 (about to be 4!!!) is all about quick and easy. I need recipes that make my life easier!Today, I'm showing you a simple vegetarian dish that will make your bellies thank me!All you need is a few ingredients and you're off! It hardly takes anytime at all! You can serve it alone with a chapati or serve up some Karahi Chicken with it! Guess what... It's even kid approved!Heat the butter over medium heat. When the butter has melted add in your onions and jalapeño.IMG_2452When these have browned add in your ginger garlic paste. Cook for 1-2 minutes. Add in your coriander, cumin, and turmeric. Allow these to cook together for another 1-2 minutes.IMG_2464Stir in your tomato and cook for five minutes.IMG_2467Add in your potatoes, chickpeas, and water. Turn up the heat to medium/high heat. Bring to a boil. Reduce heat and simmer.IMG_2472Sprinkle in the garam masala, salt, and squeeze in your lemon juice. He called on his way home from work, asking what I was making for dinner. Now, I have a nit of nostalgia when it comes to Shan spices. When my husband and I first got married I had no idea how to make and Indian dish. My first experience was horrible! I spent an entire day shopping for spices and prepping to make chicken curry. Let's just say my husband was excited all day and the moment we sat down for dinner... you could just see it in his face.

He was trying not to laugh because he knew how hard I tried, but wow. It was even the wrong color! Instead of finding a traditional Indian recipe, I looked online for the simplest one I could find. I didn't even go to the Indian grocery store for spices! I went to our local grocery store. Needless to say I learned my lesson.

The biggest thing I learned through it all is the importance of good recipes and authentic spices. Whether you have made a ton of Indian dishes or you're a novice, Shan Foods is the perfect thing for you. They combine all their spices in a simple to use package. They even have a recipe on the back!

I wanted to show you just how easy it could be and I was looking for an excuse to try out a new recipe!

Simple Pav Bhaji Recipe

This has become one of my new favorite Indian dishes. It's called Pav Bhaji and wow. Think Indian sloppy joes with delicious veggies!

You create your delicious Pav Bhaji mixture and then put it in a buttery bun. This dish is famous where I live and people go crazy to find the best rolls or buns to serve with it!

This is the time to pull our grandmas famous roll recipe!

Simple Pav Bhaji Recipe

Ingredients:

4 Medium Potatoes1 Medium Tomato3/4 Cup Green Peas1 Onion Chopped1 Green Chili1 Cup Cauliflower1/2 Green Pepper Chopped1 Tsp Cumin Seeds1 Tbs Ginger Garlic Paste3 Tbs Shan Pav Bhaji Spice Mix (You can order this online or at your local Indian grocery store)3/4 Cup butterSimple Pav Bhaji Recipe

Directions:

Roughly chop your potatoes and cauliflower. Add it to a large pot along with your peas and enough water to cover your vegetables. Cook until tender and then roughly mash. Set aside.In a bowl mash your green chili and ginger garlic paste until the chili becomes a paste. Set aside.In a pan heat your butter until melted. Then add in your cumin seeds. Cook them until they start to splatter or pop. Add in your ginger garlic paste mixture. Cook for two minutes then add your Shan Pav Bhaji Spice Mix.Add in your onions and green pepper. Saute them until your onions are translucent.Add your tomatoes and 1/2 cup of water. Cook your mixture until the tomatoes have been cooked well and the water has cooked down. You don't want a water mix, you just want the water to help cook the tomatoes completely.Mix in your roughly mashed veggies. Add salt to your taste.Voila! You're done! Now you just need to put it in a delicious butter bun and garnish with coriander, lime, and onions.

Evenings in my house are hectic to say the least. While some people are winding down for the night, my family is just getting started. My kids have had their second wind from nap time and are bouncing off the walls.They jump from couch to couch, flipping cushions, pretending the floor is lava. Ingredients:

6-7 boiled potatoes (quartered)1/2 diced onion1 tsp turmeric1 tbs black mustard seeds2 tbs butter or ghee1 green chili (halved)1 tbs salt

Directions:

Boil your potatoes until tender. Make sure they aren't too tender otherwise this will turn into Indian mashed potatoes! Set them aside.Heat a small pan on medium low. When the pan is hot, add the butter, onion, and green chili.Cook them for about 5-10 minutes until golden brown. Add in the turmeric, salt, and mustard seeds.Cook for two minutes. Summer is almost here! My favorite season in the Pacific Northwest is definitely the summers! It's perfect outside! My family and I have been soaking it up. We had a Mother's Day Tea, which was the cutest thing ever! We went to the funnest park around! Then of course some good old thumb sucking.  The other reason I love summers is that it's the perfect time to host dinner parties! Sharline's Famous Coconut Green Beans

We all have that one person in our lives. That person who's known for one recipe. One amazing dish. Joel's family has Sharline or Chinnapinni as we call her. She makes this dish every time she has people come over. It's famous with all of her Indian and white friends! The true test is that Joel hates vegetables and this is one of his favorite sides! What is it you ask? Coconut green beans. While we were on vacation, I begged her to teach me how to make them. I've tried to make them before with no success. They were missing a key ingredient, the coconut! As soon as you try these bad boys, they'll be a staple in your house. There is just one rule that comes with these green beans. Tell everyone they are Sharline's Green Beans!!

1 pound of frozen green beans2 tbs oil2 tbs ginger garlic paste2 tsp turmeric1 tsp Indian chili powder1-2 tsp salt1 1/2 tbs coconut powder **I got my coconut "powder" from the Indian store. It looks more like coconut flakes.**

Directions:

Heat your pan to medium heat. Add in your oil. When the oil is hot add your onion and brown. Drop in your turmeric, ginger garlic paste, salt, and chili powder. Cook down for 2 minutes. Add your green beans.**You can use fresh or frozen green beans. If you decide on using fresh, add in 1/8 cup of water.**Put a lid on your green beans and cook until tender. I like to cook mine and leave a bite to it. At the very end, add in your coconut and cook for another minute or so.Serve and enjoy!

IMG_7335"Daddy, show me how to eat just like you." I love seeing our little guys take interest in their culture. Liam sees his daddy and I eat Indian food with our hands. Usually he just uses his fork or will use his hands. A few days ago during dinner, he noticed that daddy was using his hands in a very specific way. Then he repeatedly asked Joel to show him how to do it. IMG_7337He's definitely learning! There are certain things within Indian culture we push hard with the boys. One of which is what they call people. Like I have mentioned before, there are certain names for uncles, aunts, grandparents, elders, etc. However there are also things we want the boys to pick up on their own. Keema curry and potato masala. Ingredients:1 tbs butter1/2 chopped onion1/2 tbs ground coriander1/2 tsp turmeric1 chopped tomato1/2 cup water2 cups of potatoes (You can add any other vegetable you'd like too!)1/2 tbs garam masala1 tsp salt1 tbs lemon juice1 jalapeño1 tbs ginger garlicDirections:Heat butter and oil over medium heat. Once the butter is melted add your onion and cook until golden brown.IMG_7321Add your turmeric, ginger garlic paste, coriander, and  jalapeño. Cauliflower Curry

This is my cousins FAVORITE dish and has quickly become a regular to our Indian feasts!

It is extremely quick to prepare and takes even less time to cook. I know what you're thinking... Aren't Indian dishes supposed to take hours and hours to make? Some dishes require the hours of slow cooking to get the taste just right, but not this beauty. This one takes about 45 minutes from start to finish!

Ingredients:

1 head of cauliflower (cut up into small pieces)
1 tbs ginger garlic paste
1 tsp turmeric
1/2 tbs black mustard seeds
1/2 cup heavy cream
1 tsp salt
2 tbs oil or ghee
1/2 diced onion
1-2 green chilies

Directions:

Heat a pan with oil or ghee on medium low. Allow the oil to warm up.

Once the oil is hot, add your onions and green chilies. I usually add two chilies, but it depends entirely on your families tastebuds. We like our food spicy! If you like a more mild spice level, you can add one green chili and take it out before you serve it. 

Slowly brown the onions until they reach a beautiful golden brown. 

Add in your ginger garlic paste, mustard seeds, and turmeric. Let them cook for about 1-2 minutes. 

Gently stir in your cauliflower. This is where it can get messy! Continue stiring until all of the cauliflower pieces have a bit of yellow.

Let your cauliflower cook until tender for about 5-10 minutes. Add in your heavy cream and cook for another minute. 

Serve with rice.

Samosa Recipe

Are you ready for one of the best appetizers you will ever have in your life? I hope so because this is the recipe for samosas! I made them for my family last night and I was barely able to take a picture of the finished project because my cousins and husband kept sneaking in and eating them!I made meat and potato samosas, but you can stuff them with anything that sounds good to you!

Meat and Potato Samosas

Ingredients:

Dough-3 cups of flour2 tbs semolina flour1/2 tsp salt1/4 cup of vegetable oil1/2 cup of warm waterFilling-1 lb ground meat (I used turkey)1 tsp salt1 1/2 tbs cumin powder1 tsp turmeric1/2 diced onion2 tsp chili powdervegetable oil2 tbs ginger/garlic paste1 1/2 tbs garam masala5 large potatoes1 cup peas

Directions:

Peel and boil your potatoes until tender. Strainthem and set them aside to cool.In a separate pan heat you oil on a medium/low temperature. When the oil is warm, add your onions. Cook your onions until they are a nice golden brown color.Add in the turmeric, cumin powder, chili powder, ginger/garlic paste, and garam masala and cook for two minutes. Add in your ground turkey. If you are using any other meat, besides ground turkey, brown/strain your meat first and then add it at this step.When your meat has cooked, add in your salt and peas. Cook for an additional 5 minutes. Add in your potatoes, mix, and cool.As your filling is cooling, you can start on your dough.Add your dry ingredients into a bowl (salt, flour, and semolina flour). Mix and add your oil.This is where you will get your hands a little dirty. Slowly add your water, a little bit at a time. While you are adding your water, you will mix it with your hands. Make sure all of your dry ingredients are mixed into your dough and start kneading. Knead until your dough until it starts looking like the picture below and has become more elastic.Separate your dough into six balls. Roll them into a circle. Take one dough ball and roll it out into a large circle. It needs to be very thin.IMG_3899Cut your dough in half.IMG_3900Pick up one piece and wet the edges.Fold the straight edges so they overlap and press together. This allows you to have a triangular pocket to stuff your filling inside.IMG_3901IMG_3903Spoon your filling inside. Continue to push your filling down so you can make sure it is nice and full. If your dough starts to break, touch it with a bit of water and pinch it together.Take the top half and fold it over.IMG_3905Then take your other top half and fold it over. Pinch the seam so there are no holes or openings. If there are any holes, your filling will come out during the frying process.IMG_3906Take a deep pot and fill it with enough oil to fully cover you samosas. Do not heat your oil until you are done putting your samosas together because your oil can burn. Heat your oil on medium high. Test our oil by putting a small piece of dough in. It should instantly start bubbling and sizzling.Add your samosas in three at a time. Turn them over after 20 seconds. Take them out when they are a nice golden color.IMG_0264You can serve these with a nice cilantro chutney! Watch out because these things fly off the plates at our house and everyone LOVES them!
